-Observed that a sign or poster that notifies food employees to wash their hands is not provided in either restroom and in one of the handwashing sinks in the kitchen. Handwashing signs were provided to the establishment at the time of the inspection. (Corrected During Inspection)
-The ambient air temperature measuring device located in the following unit is not accurate in °F: 2-door flat-top refrigerator. Note: Food employees take food temperatures of food in all units throughout the day.

-A food employee was observed drinking from an uncovered beverage container while in the kitchen. The food employee covered his beverage container and used a lid. (Critical-Repeat)(Corrected During Inspection)
-Raw animal food holding in a manner that may cause cross contamination of ready-to-eat food as follows: observed chicken adjacent to pastrami in the 3-door prep refrigerator. Food items were properly stored in the refrigeration unit after a conversation with the certified food manager. (Critical)(Corrected During Inspection)
-When tested, the chlorine-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the dishwashing machine with a concentration of 0 ppm total chlorine. (Critical)
-Observed beef stored on the floor and/or food stored less than 6 inches off the floor. Beef was stored 6 inches or more above the floor. (Corrected During Inspection)
-The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications. Observed 0ppm of chlorine in the dish machine. Please discontinue dish machine use until it has been repaired. Until then, manually wash, rinse, and sanitize dishes and utensils.

-The handwashing facility located in the kitchen is blocked, preventing access by employees for easy handwashing. Please remove rice cooker to clear the area for easy access to handwashing sink.
-Observed the handsink in the kitchen being used to store water pitchers. Items were removed and the handsink was cleared. (Corrected During Inspection)
-Observed that poisonous and toxic materials are not properly stored to prevent the contamination of food. Observed air freshener stored next to cans of soy sauce. The aerosol can was removed from beside the food. (Critical)(Corrected During Inspection) 
-The temperature measuring device in the following mechanically refrigerated unit was not properly located in the warmest part of the unit: 3-door prep refrigerator unit. (Corrected During Inspection)
-Food stored on the floor and/or food stored less than 6 inches off the floor. Observed eggs and juice being stored on the floor of the walk-in refrigerator.
-The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: 3-door prep refrigerator gaskets were observed to be in need of cleaning.
-Observed that items that are unnecessary to the operation or maintenance of the establishment are being stored on the premises: non-working ice machine.

-The handwashing facility located in the front area is blocked by a trash container, preventing access by employees for easy handwashing. The trash container was removed for easy access to the handwashing sink. (Corrected During Inspection-Repeat)
-The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device: half and half milk at 49F, fat free milk at 44F, in Summit 1-door reach-in refrigerator. DISCARDED. (Critical-Repeat)(Corrected During Inspection) 
-The following units was overstocked and meeting the food storage demands of the establishment. The unit was keeping an ambient temperature of 46F due to air flow being blocked by overstocking. Items were moved in the refrigerator to allow free air flow. (Corrected During Inspection)
-There was no temperature measuring device located in the following cold or hot holding equipment: True 2-door prep refrigerator. A thermometer was provided. (Corrected During Inspection)
-Food stored in a location where it is subject to splash, dust or other contamination as follows: Observed condiments (e.g. salt, paprika,) stored by the handwashing sink. No splash guards were observed to protect the food items from splash contamination. After speaking with the person in charge, the items were moved from the handwashing sink. (Corrected During Inspection)
-The cutting board on the True 2-door prep refrigerator is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition. Please resurface or change the cutting board.

Observed the sanitizing solution in the wet wiping cloth bucket with a concentration greater than 200 ppm total chlorine. The solution was diluted down to 200 ppm. -Observed that poisonous and toxic materials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Observed bleach containers stored adjacent to beverage syrups. Bleach containers were moved away from the syrups and stored in an appropriate location. (Corrected During Inspection)
-There was no temperature measuring device located in the following cold or hot holding equipment: flat-top freezer.
-Wiping cloths improperly used for the following activity: cloth was placed under cutting board. Removed. (Corrected During Inspection)

-The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: sliced tomatoes at 43F, ham at 43F, American cheese at 44F in walk-in refrigerator; American cheese at 45F in Beverage-Air 2-door prep refrigerator. Walk-in refrigerator was adjusted to below 41F, and the lid on the Beverage-Air 2-door prep refrigerator was closed to maintain temperatures at 41F or below. -The following unit was not sufficient in capacity to meet the food storage demands of the establishment: walk-in refrigerator. 
-The food temperature measuring device located in the following cold or hot hold unit is not accurate in °F: walk-in refrigerator. A thermometer accurate within one degree F was provided at the time of the inspection. (Corrected During Inspection)
-There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions. (Repeat)

Note: At the time of the inspection, the owner was contacted and stated that he had the valid permit under lock. The permit would be posted as soon as he unlocked the document.
-Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. -The following equipment/utensils were observed soiled to sight and touch: can opener blade. (Critical)(Corrected During Inspection) 
-The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications. Observed the ES200 dishmachine to be washing with 0 ppm of chlorine. A techinician was called and repaired the unit during the inspection. The machine tested out to 50 PPM of chlorine. (Corrected During Inspection)
-There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions. (Repeat)
-Outside refuse container was uncovered. (Corrected During Inspection-Repeat)
-Observed that mops are improperly stored between use. Mops were hung to air dry. (Corrected During Inspection)
-Observed that items that are unnecessary to the operation or maintenance of the establishment are being stored on the premises. An extra ice machine not in use is being stored in the kitchen. 

Amma Vegetarian Kitchen

-When tested, the chlorine-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. -The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device:tomatoes at 53, ginger at 52, paneer 43F in Beverage-Air 1-door refrigerator. -The following refrigerated, ready-to-eat, potentially hazardous food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: sambari (lentil) (Critical-Repeat)
-The following units was not sufficient in capacity to meet the food storage demands of the establishment. Beverage-Air 1-door refrigerator (holding at 48F). A technician was called and the unit was repaired on site. Furthermore, the unit was observed to maintain temperatures at 41F or below. (Corrected During Inspection)
