He'll be using traditional Filipino ingredients with his own modern flair. Grilled Pork with Soy Vinegar Sauce (liempo); Deep Fried Pork Pelly (litsong kawali) served with Jasmine Rice; Filipino "Chopsuey" Tower; Deconstructed Halo Halo (the famous dessert of the Philippines).
