10 Great Ways to Serve Fruit for Dinner

Take advantage of all the delicious fruit that is in season right now!

I would be the world’s healthiest eater, if it was late summer year-round. My family loves everything that is in season right now: peaches, blueberries, blackberries, and strawberries. We eat them with nearly every meal. When we enter the farmer's market, I’m shocked they don’t give us standing ovations. I’m quite sure our fruit expenses keep at least a few stands in business. 

It is super easy to serve up fruit for or with dessert, but why not add it to your meal too? Try one of these ten great recipes with dinner this week!

1. Watermelon Feta Salad: Unbelievably delicious and refreshing.

2. Spicy Cucumber Blueberry Salad : Another shocking, but amazing combination.

3. Mango Salsa: Cut 2 mangoes into small chunks. Dice ½ to ¼ of a yellow onion. Chop one small bunch of cilantro or Italian parsley. Combine. Squirt ½ of a lime on top and stir again. (This recipe works year-round, it taste just as good with frozen mango).

4. Strawberries with Balsamic Vinegar: Slice a pound of strawberries, cover with a mixture of 1.5 tbsp balsamic vinegar and 1 tbsp sugar. Store in fridge for at least one hour before serving.

5. Grilled Peaches: Cut peach in half, peel and remove pit. Brush with melted butter and sprinkle with a bit of brown sugar. Grill flat side down until warmed through.

6. Homemade Panera Salad: I loved this salad so much at Panera, I had to make it at home. Top lettuce with strawberries, blueberries, pineapple, pecans and grilled chicken. Serve with a sweet vinaigrette dressing.  

7. After reading these Girls Gone Child recipes, I combined the two and made a delicious one dish lunch. This comes under the category of “things you don’t think your kid will be likely to eat,” but I suggest giving it a try. You never know, they might surprise you. Combine a bowlful of pre-cooked, chilled quinoa (keeps for several days in the fridge), a couple of spoonfuls of greek yogurt, a small handful of blueberries and a sprinkle of pine nuts.
